Chicken Salad with Fennel & Onion Jam and Soledad Goat Cheese (by delaneyes)
Homemade chicken salad (chicken breast, celery, onion, Craisins, mayo, greek yogurt, salt, pepper, celery seed)
Homemade fennel & onion jam (from Put ‘Em Up preservation cookbook; carmelized fennel, onion with thyme, white wine vinegar and brown sugar)
Soledad Goat Cheese (farmer’s market purchase, made on a goat rescue farm)
Kabocha Squash Pancakes (by delaneyes)
Kabocha squash and leek pancakes with soft scrambled egs and applewood bacon.
Mark is often encouraging me to “use what we have”, as I have a tendency to always want to go grocery shopping.
The pancakes were a result of leftover roasted & mashed kabocha squash, and some leek confit from a party last weekend. I threw those things together with an egg, 1/3 cup of flour, cinnamon, nutmeg, cayenne pepper, cumin, and paprika, and then cooked just like you would a pancake.
The result was tender and spicy, sweet and savory. I made a batch for a dinner side with lentils, and then again for breakfast as pictured here. Finished the dinner batch with a little sea salt, and used maple syrup on the breakfast batch. DELISH!
Chicken & Pea Salad with Lentil Spread, Cheddar Cheese, Butter Lettuce and Crostinis (by delaneyes)
Brussel Sprouts, Red Onion & Mozzerella Pizza (by delaneyes)
Mark made pizza dough, and nailed this homemade pizza! Fresh farmer’s market ingredients, handmade dough… it doesn’t get any yummier (or yuppier).
Upside Down Cinnamon Apple Cake (by delaneyes)
Adjusted the recipe found here: <a href=”http://www.marthastewart.com/313216/apple-cinnamon-bundt-cake” rel=”nofollow”>www.marthastewart.com/313216/apple-cinnamon-bundt-cake</a>
Dipped the apples on top in egg/butter/sugar mixture before placing them in the bottom and sides of the cake pan, then poured mixed batter over that.
My confectioner’s sugar icing was a little too thin, but other than that it was a nice, moist coffee-like cake. Perfect for breakfast, with a nice cup of coffee!
Turkey Burger with Guac, Carmelized Red Onion, and Dried Cranberries
This is how I usual order burgers at The Counter, but did it at home this time. There’s also a nice helping of extra sharp white cheddar on there. The cranberries are the odd addition but they add such a nice sweet and subtle kick in every other bite, I can’t pass them up!
Yellow Beet & Goat Cheese Salad
Mark made this fresh and healthy salad using yellow beets, goat cheese, spring mix greens and pine nuts, with a good pour of balsamic vinegar and olive oil over everything.
Onion & Cheese Tart with Cream Cheese Crust
A delicious Mom recipe that I translated from the usual mini-tart rendition to a full tart size.
