Kabocha squash and leek pancakes with soft scrambled egs and applewood bacon.
Mark is often encouraging me to “use what we have”, as I have a tendency to always want to go grocery shopping.
The pancakes were a result of leftover roasted & mashed kabocha squash, and some leek confit from a party last weekend. I threw those things together with an egg, 1/3 cup of flour, cinnamon, nutmeg, cayenne pepper, cumin, and paprika, and then cooked just like you would a pancake.
The result was tender and spicy, sweet and savory. I made a batch for a dinner side with lentils, and then again for breakfast as pictured here. Finished the dinner batch with a little sea salt, and used maple syrup on the breakfast batch. DELISH!

Dipped the apples on top in egg/butter/sugar mixture before placing them in the bottom and sides of the cake pan, then poured mixed batter over that.
My confectioner’s sugar icing was a little too thin, but other than that it was a nice, moist coffee-like cake. Perfect for breakfast, with a nice cup of coffee!
Turkey Burger with Guac, Carmelized Red Onion, and Dried Cranberries
This is how I usual order burgers at The Counter, but did it at home this time. There’s also a nice helping of extra sharp white cheddar on there. The cranberries are the odd addition but they add such a nice sweet and subtle kick in every other bite, I can’t pass them up!
