Dipped the apples on top in egg/butter/sugar mixture before placing them in the bottom and sides of the cake pan, then poured mixed batter over that.
My confectioner’s sugar icing was a little too thin, but other than that it was a nice, moist coffee-like cake. Perfect for breakfast, with a nice cup of coffee!
Turkey Burger with Guac, Carmelized Red Onion, and Dried Cranberries
This is how I usual order burgers at The Counter, but did it at home this time. There’s also a nice helping of extra sharp white cheddar on there. The cranberries are the odd addition but they add such a nice sweet and subtle kick in every other bite, I can’t pass them up!

I made bean & cheese burritos instead of their beans, chicken and rice, one of my staple “single girl” meals. They weren’t very photogenic so no picture, but I did make the apple salsa to go with them. It was SO fresh and delicious. I used Pink Lady apples instead of the Granny Smith (I find Granny Smith apples to be extremely overrated!) and lemon instead of lime juice (using what I had.) The taste was extremely bright, and while the apple was very sweet, it was nicely balanced back to savory with the cilantro.
And as always, I subbed Greek yogurt in for sour cream - it’s healthier, and tangy-er!
I want more.
